Chapter 1864 Natural Short Snack Eel

"Kabayaki" refers to the practice of cutting the fish in half, skewering it on skewers and grilling it, while brushing and soaking it with sauce to enhance the flavor. If it is grilled without brushing the sauce, it is called "Shirayaki".

Although in theory Kabayaki does not limit the type of fish, in fact this method has been almost exclusive to eels from the beginning. At most, it is used on eel-like fish such as conger eels, wolf tooth eels, and loaches. Well, I have almost never heard of Kabayaki pork, Kabayaki beef, or Kabayaki other dishes.

In fact, the original Kabayaki eel was just cut into sections and grilled on skewers. It was named "Kabayaki" because of its shape like a calamus.

With the development of technology, it was gradually improved to what it is today. Although it no longer looks like Iris, the name Kabayaki has still been used.

Don't underestimate this cooking technique, from complex to simple, seemingly simple things test the perseverance of a craftsman throughout his life. Why do you say this?

There is a saying in the RB eel industry, "It takes three years to kill an eel, eight years to skewer an eel, and a lifetime to grill an eel." This means that grilling eels is a skill that requires a lifetime of study.

'God of Eels' Kanjiro Kanemoto believes that the difficulty of grilling eels lies in judging the physical condition of each eel. The grilling process also needs to be continuously fine-tuned according to the difference in charcoal stacking and the release of eel oil. Only in this way , can bring almost perfect eel to diners.

Unfortunately, like bluefin tuna, river eels are about to be eaten to extinction by RB people.

This is really not a joke. Didn’t you hear Yang Sen say that the expected output this year is less than half of last year?

This still refers to farmed ones. There are already very few natural eels, and coupled with the high fishing costs, even RB can hardly eat so-called wild river eels.

Of course, due to the special characteristics of eels, people catch eel fry and then start artificial breeding.

As the protagonist of eel rice, the RB eel, also commonly known as river eel, has extremely low production of its seedlings caught in the wild. In some areas, it has only reached 1% of previous years. In fact, as early as 2014, the RB eel was already an endangered species. .

Due to their unique living habits, eels are extremely difficult to cultivate on a large scale.

The same goes for RB river eels. They are born in the sea. When they are young, they come to freshwater rivers. When they become adults, they go to the sea to lay eggs and spend the rest of their lives in the sea.

Strangely, people have never been able to find the place where adult eels lay their eggs in the sea.

Until the beginning of the last century,

A group of scholars discovered the European eel's breeding ground near Bermuda, 5,000 kilometers away from its freshwater home.

So these scholars and experts also expanded the search scope, and finally found newly hatched RB eel seedlings on the south side of the Mariana Islands in 2005, proving that this is their breeding ground.

Before the long migration process, eels are not differentiated by gender. Instead, the eels are stimulated on the migration path to produce gender and reach sexual maturity.

As for what was stimulated, people have never known.

Since the 1930s, RB people have tried various methods. It took more than 40 years before they were finally able to catalyze the sexual maturity of eels in an artificial environment, thereby hatching eel seedlings through artificial breeding. However, the artificially hatched eels at that time Seedlings only survive for 14 days.

It can be said that as a country with scarce resources, RB people have tried their best to eat.

The newly born eel seedling looks like a thin transparent willow leaf. Not only does it look strange, it is picky and only eats sea snow.

Marine snow is not snow that falls in the sea, but debris mixed with the corpses of plankton in the upper ocean and the excrement of other organisms. It gets its name because it falls to the bottom of the sea.

So if you want to successfully raise eels, you must make artificial sea snow, but you can see with your big toe how difficult it is to artificially simulate sea snow.

Of course, with the continuous efforts of RB people, they finally succeeded. Experts found that artificial sea snow made from dogfish yolk mixed with vitamins was barely acceptable to eel seedlings.

However, in a closed breeding environment, the sea snow scattered in the eel pond will stick to the wall of the pond, causing the water quality to deteriorate and the fry to die in large numbers.

When the fry eat the artificial sea snow on the wall of the pond, their fragile lower jaws are easily knocked out of shape, making them unable to eat.

So RB people developed a kind of breeding equipment specifically for cultivating plankton. Through water flow, it can ensure that food and fry are always suspended in the middle of the water flow.

But the difficulty is not over yet. After solving the problem of eating the little eels, we also need to solve the problem of growth. The eel seedlings are transparent, so how to make them opaque is another headache for RB people.

But there is no way, people have to eat, right?

The life of RB people cannot be separated from eels. Who makes the men of this nation naturally "short"! Do you have to think of ways to improve the harmony of your life through external stimulation?

As we all know, eels have the magical effect of strengthening their bodies.

In short, the RB people did not give up, and finally discovered by accident that reducing the salinity of the seawater by 50% and stopping feeding can cause the phyllophylla fry to turn into opaque eel fry.

After overcoming many difficulties, the first fully artificial breeding of RB eels was completed more than ten years ago.

However, the cost of each fry was as high as US$10,000. Although this price was later reduced to US$400, it was still far beyond the affordability of the market.

The breeding cost is only US$400, so how much will it cost? Not to mention ordinary people, even those with golden collars dare not eat it regularly. They only eat it once a year at most.

There has never been a decisive breakthrough in artificial breeding, but the market demand is still strong, and people can only catch more wild eel fry.

Coupled with economic development and over-exploitation of the environment, the freshwater environment where eels live has been greatly damaged, and eel fry are facing depletion due to excessive wild fishing and consumption.

Maybe in a few years, eels will also be auctioned at sky-high prices, just like bluefin tuna, which will be eaten alive until they become extinct, poor little eels.

Closer to home, an authentic bowl of eel rice is of course not only authentic in the ingredients, but also in the process of making it.

Many people have the misconception that eel rice is just a piece of fried eel placed on rice and served with sauce. There is no technical skill at all and you can make it at home.

Indeed, you can make it at home without considering the taste, but a bowl of authentic eel rice takes at least an hour, not counting the preparation in advance.

For example, before formal production, in order to reduce the fishy smell of eel, the eel will be kept hungry in the pond for a day or two, and then go through the five indispensable steps of cutting, skewering, grilling, steaming, and roasting. Talent is presented on people’s dining tables.

Behind this production process is the attitude of every eel chef striving for excellence. But in the era of fast-moving goods, who is willing to wait for an hour for a bowl of eel rice?

Maybe most people are not willing, unless those big foodies with money and leisure are willing to pay anything for a bite of authentic taste!
